THE TEAM 

Megan Dauphinais and Mimi Weissenborn are the team behind Bites &Such and eventually Camp Heron. Both have extensive backgrounds in the food & beverage/hospitality world and have come together to utilize their skillsets to create thoughtful experiences. Through their curated events and meals they focus on themes of community, creativity, and gratitude which translate to their overall goal of opening camp in order to celebrate those foundations.

MIMI

Trained at L’Academie de Cuisine, Chef Mimi began her culinary career in New York City, working her way through a variety of acclaimed kitchens while developing a distinct and confident cooking style. Her voice as a chef came into full focus during her tenure as Executive Chef of Vinateria in Harlem, where she helped earn the restaurant a Michelin Recommendation, led a sold-out dinner at the James Beard Foundation House, and collaborated on the International Women’s Day Beard House dinner.Her journey later brought her to Portland, Maine, where she became the Executive Chef at Sur Lie, a James Beard Award semi-finalist and 2023 nominee for Outstanding Hospitality. Since arriving in Maine, she has also taken over the kitchen at Gather and played a key role in launching Catface Cafe, continuing to shape thoughtful, community-driven dining experiences.Chef Mimi can most recently be seen competing on the latest season of Top Chef, showcasing her creativity, technical skill, and unwavering drive.As a proud member of the LGBTQIA+ community, she is dedicated to fostering inclusive spaces both in and beyond the kitchen—using food as a powerful connector and a catalyst for community.

Event production has come naturally to Meg for as long as she can remember. Her passion for bringing people together through thoughtful planning, design, and atmosphere led her to focus her BFA at MassArt on event design. Since then, she has spent years blending her love of styling, hospitality, and the culinary arts to create immersive experiences that inspire joy, connection, and a sense of place.Her professional background spans a wide range of industries, including event planning, interior design, food and beverage, and creative entrepreneurship. She has collaborated with companies such as Party by Design and Chive Sustainable Events, orchestrated fundraising events, managed front-of-house operations, and contributed to restaurant openings and bar management.Drawing on experience as both a creative and a small-business owner, Meg brings a personal, detail-driven touch to every project. Her work is rooted in artistry, precision, and a genuine passion for curating unforgettable moments.
